This is a classic and timeless Champagne, composed of an almost equal blend of the region’s three main grapes: 30% Chardonnay, with 35% each of Pinot Meunier and Pinot Noir. The nose showcases scents of green and red apples, alongside vivacious citrus and buttery brioche, gained from 2 years of maturing on the lees. The Gobillard family's winemaking venture dates back to 1933, when against the wishes of his family, Gervais Gobillard spent his life’s earnings on one hectare of vineyards in Hautvillers (the home of Dom Perignon). These days, the winery has become one of the most respected in Champagne, having been revolutionised by Jean Marie Gobillard himself, and his four sons, Philippe, Jean François, Thierry, and Françoise. This wine’s perlage is fine and persistent on the palate, bursting into flavours of apple, pear, and quince. Look for further notes of hazelnut and French pastries, balanced out by acidic citrus notes. It is a well-balanced and agreeable Champagne, a great entry point into JM Gobillard et Fils’ range, and perfect for serving on special occasions. Consider pairing it with fine seafood and a plate of soft cheese.
