A beautiful golden colour in the glass, this Champagne is bursting with ripe scents of dried fruits and nuts, white flowers, and buttery brioche. It is a careful blend of 40% Pinot Noir and 60% Chardonnay, which go through a blind taste-testing process before being included in the Prestige range. The Gobillard family’s foray into winemaking began in 1933, when Gervais Gobillard spent his life’s earnings on a single hectare of vineyards in Hautvillers, home of the world-famous Dom Perignon. However, the company as we know it today was established in 1983, when the “fils” of the family – Philippe, Jean François, Thierry, and Françoise – founded the modern-day cellar. The Prestige Millésime is intense and full-bodied in the mouth, with some fantastic tertiary flavours from ageing on the lees. It spends a minimum of 5 years in the cellar before disgorgement. The Prestige range is the crown jewel of JM Gobillard et Fils, packed with mature flavours of lemon rind, orchard fruits, white peony flowers, and a smattering of nuts and pastries. It is perfect for special occasions, and deserves to be paired with a fine seafood dish, creamy cheese, or caviar.
