Drink it now or cellar for up to 25 years. It is recommended to decant it for an hour. Founded in 1958, Produttori del Barbaresco is a historic cooperative winery that today has over 100 hectares of vineyards and 50 families of winemakers. Barbaresco Riserva “Pajé” is an elegant and structured red wine obtained from Nebbiolo grapes selected and hand-picked from the Pajé cru. The vineyard, located at about 250 meters above sea level among the magnificent hills of Barbaresco, in Piedmont, enjoys a west, south-west exposure and clay-limestone soils with a sandy bottom. After fermentation in steel and a period of maceration on the skins, the wine rests for 36 months in large oak barrels, followed by another 6 months in the bottle. In the glass, the wine shows an intense and clear color with ruby red tones. Its aromatic profile is inebriating and complex. It opens with aromas of berries and cherry, followed by floral notes of violet and rose, and closes with spicy and balsamic hints. On the palate it reveals all its character: it is powerful and stylish, concentrated and elegant. It has a medium body and strong but well-integrated tannins. The finish is long, spicy and persistent. Despite its incredible ability to age and evolve, it is ready to drink immediately, accompanied by duck breast, risotto with truffle or wild boar stew.
