Founded way back in 1596 in Nuits-Saint-Georges, Domaine Guy & Yvan Dufouleur is a long-standing family winery run today by Guy's son Yvan, with the help of his wife Gaelle. The company, which sold the negociant branch of their business in 2006, focuses its work only on wines produced from grapes grown on the 28 hectares of the estate spread between the Côte de Nuits and the Côte de Beaune. The Chardonnay grapes come from vineyards with an average age of about 30 years distributed over 4 plots in the Hautes Cotes, Concoeur, Chaux, and Meuilley, at an altitude of 350 meters on poor and stony calcareous clay soils. Fermentation takes place in thermoregulated tanks for about a month and the finished wine rests for 8 months in stainless steel tanks. The Bourgogne Hautes Cotes de Nuits 16eme Generation Blanc has a bright color with pale gold tones. Its aromatic profile is fresh and fragrant with notes of citrus and crisp white fruit, hawthorn, and honeysuckle. On the palate, it is lively and soft. It has a good balance and a marked acidity that will allow it to age well. Try it with snails, shellfish, or tartiflette.
