Drink it now or cellar for up to 25 years. It is recommended to decant it for an hour. After years of experience in Burgundy and Bordeaux, Stephan Asseo decided to found his company L'Aventure, choosing California, and more precisely the Paso Robles region, between San Francisco and Los Angeles. Today the estate extends over approximately 51 hectares of vineyards planted with international varieties such as Syrah and Cabernet Sauvignon. L'Estate Cuvée is a blend of Syrah and Cabernet Sauvignon with small additions of Petit Verdot. The grapes come from the estate's vineyards that benefit from exceptional conditions, with good exposure, excellent drainage, and a climate that alternates hot days and cold nights and favors the slow and complete ripening of the grapes. After the harvest and vinification, the wine rests in new French oak barrels for approximately 15 months. The wine has a deep, intense purple color and a complex, powerful aromatic profile. On the nose, it reveals aromas of black cherries, cassis, blackberry, dried flowers and exotic spices, tobacco and chocolate, graphite and licorice. On the palate, it is rich and structured, full-bodied and rounded. It is concentrated and deep and has a strong acidity that gives it great balance. It is juicy and lively with fine tannins. The finish is long and spicy. Try it with a Lebanese lamb stew.
