Skate is sourced from local, Atlantic waters and it's wings are expertly filleted by our skilled fishmongers. Mild and sweet and made for the sauté pan, skate fillets are best lightly dusted with flour, sautéed, and served with a sauce of butter, lemon zest, and capers.
