Domaine Jean-Paul & BenoƮt Droin is a family-run winery with a history of nearly 400 years in the prestigious Chablis wine region. The estate, which owns almost 25 hectares of vineyards, is today led by Benoit, the 14th generation of the Drouin family. The Chardonnay grapes come from the plot between Les Clos and Valmur planted on a slope with a southwest/west exposure, on different types of soil, all of the same Kimmeridgian. At the top, the soils are stony and calcareous. In the center, there is a stripe of blue clay. At the bottom, the soil is deeper and clayey. After the manual harvest, the fermentation occurs spontaneously partly in steel and partly in barrique. The name of the wine is a tribute to Louis Drouin who bought the vineyard in 1920. Chablis Grand Cru Hommage a Louis is a powerful and elegant wine and has a strong character. On the nose, it reveals a broad and complex aromatic profile with notes of white fruit and ripe stone fruit, and then mineral and smoky hints. On the palate, it is fresh and round, balanced and well-structured. It has a refreshing acidity and great complexity and persistence. The finish recalls iodine and mineral notes. It is worth trying with sushi, and also excellent with roast turbot.
