Drink it now. No need to decant. Temet is an emerging Serbian winery located in Lozovik, near Jagodina in the Pomoravlje district. The company owns about 38 hectares of vineyards that are cultivated according to organic standards and in full respect of nature, for the production of high-quality wines made with indigenous and international grape varieties. Tri Morave White is a blend of the indigenous Morava and Temjanika grapes, in equal parts, with small additions of Smederevka. The grapes come from vineyards with different exposures and soils, but all at an altitude of about 300 meters. After the harvest and a short cold maceration, fermentation takes place at a controlled temperature in steel and the finished wine rests on the lees for 6 months. The result is a dry, fresh, and expressive wine that recalls a Sauvignon Blanc with an exotic character. In the glass, the wine reveals a bright color with straw yellow tones and greenish reflections. Its aromatic profile is lively and broad with notes of fresh white fruit and gooseberry, herbs, and apple blossoms. On the palate, it is crisp, juicy and thirst-quenching. It has a lively acidity and a good complexity of flavors. The finish is long and recalls gently herbaceous notes. It is excellent with asparagus au gratin, creamy four-cheese pasta, deep-fried or roasted artichokes.
