Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Located in the Amandi subzone of the D.O. Ribeira Sacra in Galicia, Bodega Guimaro is owned by the Rodriguez family and is now run by Pedro Rodriguez with the help of Raul Perez as a consultant. The estate covers approximately 10 hectares of vineyards and purchases additional grapes from select growers in the area. The winery's name is a tribute to Pedro's grandfather and means rebel in Galician. The wine is a blend of mostly Mencía, with additions of Brancellao, Merenzao, Garnacha, Mouratón, Negreda, and Sousón. The grapes are selected and harvested from the Meixeman vineyard, one of the oldest estates in the family, located at an altitude of between 350 and 450 meters. Here the vines, that are over seventy years old, enjoy a south-east exposure and slate and granite soil. After vinification, the finished wine rests in wooden cones for 6 months and in oak barrels for 12 months. Finca Meixeman has a bright color with lively cherry tones. On the nose, it reveals a fragrant and fascinating aromatic profile with elegant notes of red fruits, followed by hints of wild herbs and violet. On the palate, it has a good body and a fruity character. It is expressive and balanced, round and velvety, with a long and gently balsamic finish. Try it with lamb chops.
