With its long family tradition of five generations, the Domaine Chevalier is one of the most prestigious cellars in the Ladoix area, a renowned appellation of Burgundy. The estate, founded in 1850, today extends over about 15 hectares of vineyards, managed by Chloe Chevalier daughter of Claude who also deals with the work in the cellar. The two sisters of Chloe, Anais, and Julie, take care of the administration and promotion of the company's wines. The Pinot Noir grapes for this elegant cuvée are meticulously selected and harvested by hand from a vineyard of about 2 and a half hectares that enjoys south-east exposure and clay-limestone soils. The vines, which are about 40 years old, are located at an altitude of about 300 meters. The Ladoix 1er cru Le Clou d'Orge has a bright and limpid color with dark red tones. The nose reveals a large and complex aromatic profile with notes of currants, red berries, and cherries, and then hints of undergrowth and humus. On the palate, it is a classy and balanced wine. It has a refreshing acidity, a medium body, and silky tannins. It is lively and juicy with an elegant long finish. In food pairings, it is very versatile: it is excellent with mushroom risotto, rabbit stew, or with guinea fowl filled with chestnuts.
