The history of the Domaine Chevalier began in 1850, when Emile Dubois, great-grandfather of the current owner Claude Chevalier purchased vineyards in the Ladoix area in Burgundy. Located in Ladoix-Serrigny, today the Domaine is led by Claude assisted by his 3 daughters, Julie in charge of the promotion, Anais, who deals with the administration, and ChloƩ who manages the vineyards and the cellar. This delightful Cremant de Bourgogne is a classic sparkling wine produced with white grapes (mainly Chardonnay) according to the traditional method, with a second fermentation in the bottle. The wine rests on its lees for 18 months before being disgorged and released on the market. This fresh and youthful sparkling wine has a straw yellow color with fine and persistent perlage. On the nose, it reveals a lively aromatic profile with floral notes of pear and peach blossoms, lemon peel, and stone fruit. On the palate, it is pleasantly refreshing with a good creamy and silky texture and a delicately fruity character. The acidity is well balanced and the finish is gently mineral. It makes an elegant aperitif on its own or with deep-fried finger foods such as stuffed courgette flowers. It is also excellent with vegetarian risottos.
