Its vineyards extend over 6.5 hectares, part of which are located in the Puligny Montrachet appellation and planted between 1965 and 1974. Among these, some are located very close to Meursault and are characterized by clayey soils. The company carries out a philosophy focused on respect for the territory and tradition in winemaking practices for the production of wines of great quality. The Chardonnay grapes for this classy regional wine, hailing from the younger vineyards of Puligny-Montrachet, are selected and harvested manually. After fermentation, the wine is aged on fine lees for one year in oak barrels to add structure. Domaine Alain Chavy Bourgogne Chardonnay is a lively and elegant wine that reveals fragrant notes of green apple and citrus fruits and delicate hints of vanilla. On the palate, it is fresh and full-bodied with a good concentration of fruit, especially citrus and apple, and a creamy mouthfeel. It has a long finish that recalls a marked mineral vein, typical of Puligny-Montrachet wines. It is a great value wine that works perfectly with chicken dishes, served with creamy sauces, or with elegant shellfish-based recipes.
