Drink it now or cellar for up to 10 years. No need to decant. Domaine Doyard is a family-run champagne house located in Vertus. The Doyard family has been involved in wine for 12 generations and has been Recoltants-Manipulants (harvester-maker) for four. Today, this champagne house cultivates around 10 hectares of vineyards spread across the crus of Vertus, Oger, Le Mesnil sur Oger, Avize, Cramant, and Aÿ. The Le Clos de l'Abbaye vintage is a Blanc de Blancs produced with Chardonnay grapes sourced from a vineyard of about half a hectare located in the Premier Crus Vertus. Here the vines planted in 1956 give low yields and benefit from calcareous soils and excellent exposure that favor early ripening and the production of wines of great concentration. Fermentation takes place in oak barrels of at least 5 years of age. The result is a full wine with good aging potential. It shows a broad and generous aromatic profile and notes of ripe citrus, yellow fruit, and some light toasted hints. On the palate, it is round and has a marked mineral vein. It is soft and elegant with a persistent and silky mousse and a long and mineral finish. It is excellent with roasted fish or risotto with scallops.
