Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Marjan Simčič is a Slovenian winery with a long family tradition. Founded in 1860 by Jozef Simčič, the winery is today managed by Marjan. The company owns approximately 20 hectares of vineyards, distributed across the Collio (both on the Italian and Slovenian sides), 70 percent of which are cultivated with white grapes according to organic farming standards. The Pinot Grigio grapes come from selected vineyards located both in Italy and Slovenia. The vines are aged between 16 and 36 years and are planted on soils of marly, clayey, and calcareous origin. The harvest is manual and the fermentation takes place with indigenous yeasts in steel tanks. The wine then matures on the yeasts, in steel tanks for 6 months, and rests for a month in the bottle before being released on the market. Marjan Simcic's Pinot Grigio Classic has a captivating color with pale pink tones with some salmon reflections. Its aromatic profile is delicate and fragrant with notes of red apple, raspberry, and strawberry. On the palate, it has a charming character, with a velvety consistency and a lean structure. It is fresh and has a good mineral streak. The finish is persistent and pleasantly fruity. It is a very classy Pinot Grigio that lends itself well as an aperitif but is also perfect with Asian fish-based cuisine.
