Chateau Saint-Maur dates back to the 19th century and is located just 10km from Saint-Tropez in between the Mediterranean Sea and the Massif des Maures mountains. The property is today owned by Roger Zannier and run by his son-in-law, Marc Monrose, who has built a brand-new winery and renovated the vineyards. Chateau Saint-Maur is one of just 22 estates in all of the Côtes de Provence to be given the elite Cru Classé status thanks to their excellent rosé wines which make up 85% of the property’s total production. Their Saint M cuvee is primarily composed of Grenache and Cinsault along with a smaller quantity of Syrah, Mourvedre, and Cabernet Sauvignon. Conditions here are ideal for producing light and elegant Provencal rosés thanks to the warm summer days moderated by cooling breezes from the nearby coast and mountains. Once in the winery the fruit undergoes a short cold maceration to extract plenty of aromas and a subtle pink hue from the grape skins. The must is then vinified in temperature-controlled stainless steel tanks and aged on the lees to add polish and a well-rounded texture. The result is a vibrant rosé which is bursting with raspberries, red cherries and delicate orange blossom notes. The elegance and balance makes this a great match for seafood, especially dishes like spaghetti served with a clam sauce.
