Cellar for up to 12 years, or enjoy sooner. Decanting is optional, up to 30 minutes before serving. Domaine des Clos operates within a 6-hectare strip of magical wine-making land in Burgundy, sourcing grapes from renowned appellations such as Chablis, Nuits-Saint-Georges and Beaune. It was founded in 1995 by Grégoire Bichot, an enterprising member of the legendary Bichot family. This Pinot Noir came from one of Beaune’s Premier Crus, a compact vineyard called “Les Avaux” situated on an east-facing hillside. The vineyard is only half a hectare in all, so its wines tend to be wonderfully focused and refined, boasting generous aromas and subtle minerality gained from the rocky soils. This wine is a fine example of Burgundian craftsmanship. It shows a welcoming, aromatic nose, replete with red berry scents and earthy, mineral undertones. It is a stunning ruby red in the glass, and once it hits your palate you will discover a feast of red fruits, oakiness and classic umami flavours. Notes of cherry, raspberry and strawberry intermingle, supported by youthful tannins and vibrant acidity. Some time ageing in the bottle may exaggerate some tertiary, oak-imparted flavours of baking spice. It is a delightfully dry, smooth drinking experience, worthy of pairing with fine meals. It will go well with earthy food such as mushroom risotto, nutty cheeses or herby meat dishes.
