This Extra Brut Champagne starts off with a bouquet of white fruits and flowers, supplemented by hints of cream, honey and wet stone minerality. It is a “Soléra” or perpetual reserve wine, created by continuously adding each year’s harvest to a stainless steel tank. This particular cuveé is marvellously complex and is made up of 50% Chardonnay and 50% Pinot Noir. Nathalie Falmet is a winegrower and oenologist from the Côte des Bar in Champagne, who took over the family business in 1993. She creates an incredible selection of Champagne from just 3 hectares of vineyards, growing on a rich clay-limestone soil. Her approach is distinguished by the special attention that she pays to terroir, allowing the character of the soil, the microclimate and the grape to shine through. Nathalie Falmet’s Soléra has a more complex character than your average single-vintage Champagne. It exhibits a rich, layered palate with notes of tart citrus, cream, brioche and gunsmoke minerality. The perlage is fine, creating a mousse-like texture in the mouth, evolving into dry, incisive acidity. It showcases a different side to Champagne. Consider drinking it alongside fish, lobster, or a deep-fried dish.
