Drink it now or cellar for up to 10 years. It is recommended to decant it for half an hour. The Paring wine collection is produced by the winemaking team of Jonata and The Hill Estate with grapes selected from several of the company's vineyards located in the Santa Ynez Valley, Sta. Rita Hills and Santa Maria Valley, where the vines enjoy the warm California sun and the refreshing ocean breezes. These wines, produced thanks to careful experimentation with the different sites and grape varieties, are characterized by great versatility and vivacity and by a perfect balance between intensity and density. This refined red blend is made up of selected bunches of Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot. The blended wine is aged in French oak for 22 months. The Paring Red is an elegant and powerful wine that expresses all the character of Cabernet Sauvignon with classic notes of mulberry, cassis, chocolate, and hints of tobacco. On the palate, the wine is harmonious and concentrated with a bright acid vein and firm, well-integrated tannins. The finish is incredibly long and recalls fruity notes. It is the ideal wine for a barbecue and goes very well with all red meats, but it can also stay in the cellar and evolve for a few years.
