ABOUT THE WINEIn 1991, Peter Weimer gave up corporate life in Switzerland and moved to Piedmont, purchasing Cascina Ebreo. They released their first vintage in 1996, and have since won great acclaim for their unusual, expressive wines.TASTING NOTESA surprisingly rich and textured style of Sauvignon blanc, fermented in oak barriques (some of which are new). The wine spends 28 months in barrel on the lees, and a further 2 years in bottle before release. The oak-influence is extremely subtle, adding depth rather than flavour, and the wine exhibits all the classic aromatic complexity of Sauvignon blanc, with a bright, fresh palate to match.FOOD PAIRINGPerfect for chicken in rich sauces, or even pork.
