Wire Works Virgin Oak Finish Whisky is made using new oak, filling with a batch of lightly peated single malt whisky.  It is initially matured in a combination of first-fill bourbon barrels and STR casks. The alcoholic strength is brought down to a perfect level before finishing the whisky for several months in new American oak barrels with a range of different toasts and char levels.. Made with English barley, live brewer’s yeast and a long fermentation time to add deep fruit notes in the spirit. This has resulted in bold oak-forward flavours from the casks and an intense combination of sweetness & spice, that brings out the rich fruit flavours and an elegant smokiness.. Nose: Banoffee pie, fruit salad sweets, pistachio, and cranberries. Palate: Treacle tart, toasted nuts, and sweet spice. Finish: Light lingering smoke. It's still less common to see New Oak cask finished releases. This is a freedom however that English Whisky Distilleries have that their Scottish counterparts do not (Scotch must be aged in oak barrels that have previous held another liquid).. White Peak, a Derbyshire distillery established in 2016 by Max and Claire Vaughan, crafts English whisky, rum, and gin. Situated at a UNESCO World Heritage Site, a former wire works near River Derwent: thus the Wire Works brand. Their on-site process, from mashing malt to slow fermentation, influenced by local yeast, creates a unique flavour profile.
