The Ornellaia winery is located near Bolgheri, in the region of Tuscany. It has been run by the Frescobaldi family for several generations. Besides the typical red wine varieties like Merlot, Cabernet and Pedit Verdot, white grape varieties are also successfully cultivated. The grapes for this Ornellaia are harvested by hand in 15 kg boxes. This is followed by a double selection and a light pressing. Each grape variety and each vineyard plot is vinified separately. Alcoholic fermentation takes place for one week in steel tanks at around 26-30°C. The next 10-15 days follow the maceration period. Malolactic fermentation takes place mainly in oak barriques (70% new and 30% first growth). For 18 months, the wine is aged in the barriques in the temperature-controlled cellar of the Ornellaia winery. After the first 12 months, the wines were combined into a cuvée and matured for a further 6 months in the barriques. After the subsequent 12 months of bottle aging, the release for sale takes place.
