Maceration: cold maceration for 7 days at 8ºC. Alcoholic Fermentation: for 10 days at 25 ºC, with autochthonous yeasts. Malolactic Fermentation: In brand new French Oak. Ageing: completing until 18 months in brand new French oak barrels. Barrels of 225 and 400 litres medium toasted.
