Citrus australasica, or better known as the Caviar Lime, is a thorny stemmed evergreen shrub that is quickly gaining popularity. In the spring, you will be treated to pretty white blooms, followed by deep green pods that turn pink with maturity. Within the pods are pomegranate seed-like pearls that will pop in your mouth with a fizz and burst of magnificent citrus. The taste is somewhere between a lime and a grapefruit and can be eaten fresh off the tree, or used to make jams, marmalades, desserts or added to cocktails. Citrus australasica is self-fertile and should be grown in the same way as other citrus fruits. Height: 300cm (10 feet). Spread: 250cm (8 feet). Citrus fruits grown in a standard UK garden can take up to a year to develop, but they are always so worth the time invested in them. While you wait for the fruit to arrive, the glossy green foliage and scented blooms in spring make citrus trees so ideal for a conservatory or patio where they can stand out as a feature. Will thrive outdoors from May to October as they?re hardy down to 5°C, but to ensure the best life for the plant, they should be brought in in winter months.
